I get asked a lot about my family-friendly go-to meals. Although I have previously blogged my fair share of extravagant recipes, MOST days of the week are simple foods. You know me, I’m alllll about simplicity. A protein, a carb (which includes a veggie or two), and a fat. This allows me to manipulate exact proportions to best fit my macros (to learn more about macros read my previous post here).
With that said, a protein, a carb, a fat, and a veggie doesn’t have to be: chicken, rice, broccoli, and avocado every night. Although I totally enjoy those foods, my kids would label that meal “boring”, and I’d risk losing my mom-of-the-year award if we circulated that meal too often. But I can absolutely pull off having some version of Taco Tuesday almost every week (as I pull this week’s enchiladas out of the oven- yum!).
First off, tacos are delicious…always.
If you don’t like tacos you can’t be trusted, therefore we likely can’t be friends.
Secondly, they are so versatile!
It’s pretty easy to please everyone in the family. Pick a protein of choice…anything goes- from beans, to tofu, to chicken, to ground meat, to pork, to fish. Next load up your vegetables of choice, shredded lettuce, tomatoes, onions, grilled peppers. Want it on a hard shell? Soft shell? As a burrito? Not a lot of carbs left for the day? No problem make it a salad. Then don’t forget to top it off with your fats (guacamole, cheese, sour cream or greek yogurt), and then salsa—obvi!
My kids particularly love a taco bar, where they get to assemble their own toppings. You know, give them a little control so they’re more inclined to clear their plate because they “made” it themselves.
Here’s the kicker though–taco seasonings can be a total sodium blow…and not to mention loaded with msg (you know the stuff that makes it so delicious in the first place, then kills your insides slowly). So, I usually make my own, because I value my life (and my mom-of-the-year status!).
IT’S SOOOOO EASY TO MAKE- so why not?!
1 tbsp chili powder, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp crushed pepper flakes, 1/4 tsp dried oregano, 1/2 tsp paprika, 1 1/2 tsp cumin, 1 tsp black pepper, and 1 tsp Himalayan or sea salt.
Feel free to quadruple the recipe and store in a cool dry place for future use.
